I would like to know if there is any limit on Sentinel notifications or is it expected to be in the future. What if a sentinel catches thousands of events per block and has to produce notifications for all of them. Is it reliable to get every event notification?

Sentinels are limited in 2 ways, a block processing quota and a notification quota. Users on free plans are limited to 120 notifications per hour and 500 blocks per hour. The block processing quota is the number of blocks which a sentinel has detected a transaction related to an address you are monitoring.

If you hit the notification quota then you will not be notified about any further events
