Are the models provided by the site reliable in order to create an erc20 token and are they the finished project or do we need to add features?

Do you mean the repo: openzeppelin-contracts ? It is a library for secure smart contract development. Yeah, you can use it directly, but it is recommended to test your contracts all the time.
