Do you usually use the solidity version?

Projects such as 'uniswap' and 'MakerDao' were coded as solidity 0.6 <=.
In addition, the lectures and books I am listening to are often not up to date.

I would recommend anything over 0.8 because over- and underflows are fixed so you don't really need safemath anymore.
